These 7 ingredient tahini cookies are seriously good. I have been making these for the past month and include them as a treat every few days. They are the perfect snack in the afternoon with a cup of tea or I break the cookie up and mix it in with some coconut yoghurt plus cinnamon.
Now a little insight into Tahini. You may be wondering what it is. It’s a paste made from ground sesame seeds and have similar consistency to a nut butter. Tahini is a great source of iron and calcium, great additions for those who follow a plant-based diet.

1 cup almond meal
2 tablespoons sesame seeds
2 tablespoons cacao nibs
1 tablespoon cinnamon
½ teaspoon baking soda
½ cup tahini
¼ cup rice malt syrup
Preheat the oven to 180°C and line a tray with baking paper.
Add all ingredients in a large mixing bowl - only add 1 of the 2 tablespoons of sesame seeds.
Stir the mixture until combined thoroughly.
Roll the cookie mixture into 10 balls and place on the baking tray.
Slightly flatten each ball with a fork then sprinkle the remaining 1 tablespoon of sesame seeds on top.
Place the tray in the oven and bake for approximately 8-10 mins.
