Green Goddess Salad

The green goddess salad is full of non starchy greens, a source of protein and lots of healthy fats.
It's a perfect way to build your plate to help you feel fuller for longer and not spike your blood sugar levels at lunch or dinner as it's a great low carbohydrate option. I personally love adding avocado and feta to a salad, it really does add that bit of oomph!

Serves 4
Ingredients
500g chicken thighs
1 tablespoon extra virgin olive oil
1 tablespoon garlic infused oil
½ tablespoon dried or fresh chilli, chopped
20 green beans
1 cucumber
1 whole avocado
100-200g rocket
100g feta, crumbled
Handfull fresh dill, chopped
Salt & pepper
Dressing:
Method
Pre heat the oven to 180°C. Line an oven tray with baking paper then place the chicken thighs into the pan. Drizzle with extra virgin olive oil, garlic infused oil and chilli. Cook for approximately 35-40 minutes or until the chicken flesh is white.
Chop off the ends of the beans, then place them into a pot of boiling water and cook until softened. Drain excess water off and let them cool.
Place the rocket into a large salad bowl. Slice the cucumber and avocado into long thin strips and chop the dill. Place the cucumber, avocado, dill and feta into the bowl.
Add the chicken, beans and homemade pesto into the salad. Comine thouroughly and season with salt & pepper.
