Guilt Free Choc Chip Cookies

Gluten Free

My chocolate chip cookies hit the nail on the head when it comes to choosing a delectable healthy treat They are gluten-free and refined sugar free, giving you all the comfort without the guilt.​

Makes 14 cookies

Ingredients ¾ cup gluten free flour or buckwheat flour 1 cup almond meal 1⁄3 cup Greek yoghurt 2 tablespoons natural peanut butter 2 tablespoons maple syrup 1 tablespoon vanilla extract 1 teaspoon baking powder

4 tablespoons coconut oil, melted 50g (½ cup) dark chocolate, finely chopped

Method

Preheat the oven to 180°C. Line a baking tray with baking paper.

Combine the flour, almond meal, yoghurt, peanut butter, maple syrup, vanilla and baking powder in a bowl.

Melt coconut oil in the microwave.

Chop the dark chocolate finely to resemble choc chips.

Fold the coconut oil and chocolate to the mixture.

Roll tablespoons of mixture into small balls and transfer to tray. Use the back of a wet tablespoon, to flatten balls into cookies.

Bake for 10 - 15 minutes or until they turn a golden brown colour.

Notes

If you have a stash of almonds at home you can blitz them in a food processor until they reach a powdered consistency and use in raplcement of almond meal.

You can replace the greek yoghurt with coconut yoghurt to make these cookies suitable for a vegan diet.
