Beauty Bliss Balls

Vegan | Gluten Free | Dairy Free

These beauty balls are rich in antioxidants, derived from cacao and naturally sweetened with dates to curb any sugar cravings you experience mid afternoon or after dinner. They are also full of fibre to aid digestion and plenty good fats including omega 3’s to provide anti inflammatory properties to the body. The inclusion of collagen powder is optional but will provide additional support for glowing skin, stronger hair & nails, gut health, immunity, joint stability & muscle recovery. Eat up beauties.

Makes 12 balls

Ingredients

½ cup almond meal

½ cup desiccated coconut

½ cup raw almonds or mixed nuts

½ cup sunflower seeds

½ cup pitted dates

¼ cup cacao

2 tablespoons chia seeds

1 tablespoon unflavoured collagen powder (optional)

½ cup water

4 tablespoons coconut oil, melted

Topping:

Cacao nibs or desiccated coconut

Method

Place almond meal, desiccated coconut, almonds, sunflower seeds, dates, cacao, chia seeds and collagen into a blender or food processor. Blend until the mixture has combined.

Add the water and coconut oil. Blend until the mixture changes into a smooth consistency.

Roll the mixture into 12 even balls.

Top the balls with cacao nibs or continue rolling in coconut. I prefer the cacao nibs for some added crunch but these are slightly bitter so use coconut if this is not of preference.

Notes

I only had peanuts and brazil nuts when I initially made this recipe, however I suggest using raw or roasted (at home) almonds.

Alternatively, if you don’t have a food processor or blender chop up the dates very finely and add all ingredients into 1 large bowl and mix thoughorly before rolling into balls.

The balls can be stored in the fridge for up to 1 week.
