Gooey Goji Bar

Gluten Free | Dairy Free | Vegan | Fructose Friendly

My raw Gooey Goji Bars are so easy to make, with no blender or baking required! They can be made ahead of time and added to a school or work lunchbox. Each bar provides a great source of antioxidants, healthy fats and plenty of fibre. Kids will also love these as they are quite sweet in flavour!

Serves 12

Ingredients

¼ cup dried goji berries

¼ cup sunflower seeds

¼ cup pumpkin seeds

¼ cup almonds, chopped

¼ cup almond meal

¼ cup flaxseed

¼ cup sesame seeds

¼ cup buckwheat

¼ cup puffed rice

¼ cup rice malt syrup

2 tablespoons coconut oil, melted

Topping:

Sprinkle of dried goji berries

Method

Line a small baking tray with baking paper.

Place all ingredients except the rice malt syrup and coconut oil into a large mixing bowl.

Melt the coconut oil, then add it into the bowl with the rice malt syrup.

Mix the ingredients together thoroughly.

Spread the mix across the tray and flatten it down with a spoon until its evenly spread. The bar should be approximately 1cm thick.

Sprinkle some goji berries on top, then gently press these into the bar using a spoon.

Place the bar into the freeer for 15 minutes.

Take slice out of the freezer and slice into 12 pieces. Enjoy!

Notes

I store the granola bar in the refrigerator for up to a week.

If you don’t have puffed buckwheat or rice you can use oats.

If you have a larger baking tray, double the recipe. You’ll end up with more granola bars this way!
