Creamy Gluten Free Porridge

I’m obsessed with this super quick Gluten Free Porridge recipe as a Winter breakfast option. I normally have this after a morning gym session as it has the perfect amount of complex carbohydrates to refuel me. Made with quinoa flakes (rather than your traditional oats), it’s a suitable option for a coeliac or gluten sensitive individuals. It’s as simple as throwing all the ingredients in a bowl and placing it into the microwave for 1 minute, before adding your favourite toppings!

Cooking Time: 1 minutes

Ingredients

1/3 cup quinoa flakes

1 tablespoon flaxseed

1 teaspoon cinnamon

1 teaspoon maca powder

¼ cup unsweetened almond milk

½ cup water

Toppings:

1 tablespoon coconut yoghurt

1 tablespoon almonds

1 teaspoon peanut butter

1 teaspoon maple syrup

¼ cup blueberries

Method

Put all ingredients in a bowl.

Place the bowl into the microwave for 1 minute.

Note: Stir the porridge at 30 seconds, then back in for 30 seconds.

Add the toppings.

Enjoy!

 

Dairy Option

For those of you that enjoy and can tolerate dairy, replace:

- Almond milk with full fat cow’s milk;

- Coconut yoghurt with Greek yoghurt. Schedule
