Peanut Butter Protein Balls

Makes: 15 balls

My no guilt, yet delicious afternoon snack is often a protein ball. My peanut butter protein balls are made using a peanut butter by Mavyer's, that contains no nasties i.e. no added sugar, no hardened fats and no artificial sweeteners or additives.

They are high in protein and healthy fats and work out to be 0 net carbohydrates, per ball.

My superfood ingredient in this recipe I want you to know about is the maca powder, derived from the maca root plant ( part of the cruciferous veggie family). The powder is beneficial in boosting energy /mood and balancing hormones. It is naturally quite nutty and sweet in flavour and can be found in the health food isle at the supermarket.

Calories: 134 | Carbs: 3g | Net carbs: 0g | Protein: 8g | Fat: 10g

Ingredients

1 cup vanilla Whey Protein Isolate (WPI) protein powder*

3/4 cup desiccated coconut

1/2 cup water

3 tablespoons peanut butter (I used Mayver's Crunchy Peanut Butter)

2 tablespoons chia seed

1 tablespoon maca powder

1 tablespoon cacao nibs

Pinch of salt

Method

Place all ingredients into a large bowl.

Mix thoroughly.

Roll into 15 balls, approx 25g each.

Place in the fridge for 10 minutes. Enjoy!

*Plant based variation: Swap the WPI protein powder for a plant based pea or rice protein powder.
