Lemon & Macadamia Protein Balls

Two of my fave ingredients – lemons and macadamias, combined to make these (date free) low sugar bliss balls!



Gluten & Dairy Free

Makes 14 Balls


Ingredients

1 cup almond meal

1 cup macadamias, chopped

2 tablespoons psyllium husk

¼ teaspoon salt

¼ cup vanilla protein powder

1 tablespoon chia seed

2 teaspoons coconut oil, melted

3 tablespoons maple syrup

Juice and rind 2 lemons


Coatings:

Option 1 - Raw choc:

1 tablespoon coconut oil

1 tablespoon cacao

2 teaspoons maple syrup


Option 2 - Handful of dessicated coconut






Method - watch the video below!

Mix all ingredients in a bowl. Roll into 12-14 balls.

To make the raw choc, heat the coconut oil in the microwave until melted. Stir through the cacao and maple syrup, then drizzle across the balls.

You could also roll the balls in dessicated coconut if you didn't want to do the raw choc option.

Place in the fridge to firm up for 15 minutes.

Then ready to eat!
