Seedy Peanut Protein Bar
Gluten Free | Dairy Free option | Low Carb
With only 191 calories, 11g protein and 3g net carbs per serve, this baked protein bar is a far greater option than what you find on the supermarket shelf.
½ cup Mayver's Peanut Butter ½ cup sugar free maple syrup
¾ cup peanuts
¾ cup almond meal ¾ cup vanilla protein powder
¾ cup sunflower seeds
1 tablespoon Maca powder
20g 85% dark choc
Preheat the oven to 180°C. Line an oven proof loaf pan with baking paper, then spray with EVOO spray so the mixture doesn’t stick.
Mix peanut butter with maple syrup in a large bowl. Gradually add the egg.
Add all dry ingredients in a bowl (except the chocolate).
Mix together until well combined.
Press the mixture evenly into the pan using a spoon then your hands!
Bake for 15 minutes.
Take the bar out of the oven and place on a chopping board (leave it on the baking paper so melted choc doesn't go everywhere).
Slice the bar into 16 pieces.
Chop up choc and place in microwave safe bowl, then melt in microwave for 30 seconds. Give a stir, then again for another 30 seconds.
Drizzle choc diagonally across the bar one way then the other way.
Place slice in freezer for 10 minutes, to allow the choc to set and let the bar become firmer.
Store in freezer.
